Tennessee Loaded Avocado, Bacon, Lettuce, Tomato Sandwich

Yield: 4 servings

Ingredients:

8 slices of 12-grain bread, toasted

2 ripe avocados

1 teaspoon fresh lemon juice

1 teaspoon extra virgin olive oil

2 cups fresh baby spinach

4 vine ripe tomatoes, sliced

12 strips thick applewood smoked bacon, cooked

1 teaspoon red pepper flakes (or more to taste)

Salt

Pepper

Directions

1. Using a sharp knife, cut the avocado in half, lengthwise

2. Separate the two sides of the avocado & remove the pit using a spoon

3. Scoop the avocado flesh from the peel into a mixing bowl

4. Add lemon juice, extra virgin olive oil, red pepper flakes & salt and pepper to taste

5. Mash with fork until mixed well, but maintain a heavy consistency

6. Toast bread

7. Spread avocado mash to all 8 slices of bread

8. To four slices of bread, add bacon slices, fresh baby spinach and tomato slices

9. Season tomato with salt and pepper to taste

10. Pair each sandwich with it’s top piece of bread.

11. Cut in half, corner-to-corner and serve with sweet potato fries
